Add butter to a preheated skillet and wait until it melts. Then add flour (you can use it without sifting). Rub the flour into the butter over very low heat for three minutes, making sure the mixture doesn't burn.

Remove the mixture from the heat and gradually add the milk, a drop at a time. Stir well. As soon as the mixture becomes smooth, add more milk and stir again. This step is necessary to ensure the sauce remains free of lumps.

Then place the sauce on the heat for 8 minutes, stirring continuously. Once thickened, remove it from the stove and pour in the cream. Add more spices (pepper, ground nutmeg).
