Serve the sauce warm or cold with any fish dish, except aspic or jellied fish. The finished sauce can be stored in the refrigerator for several days.

Prepare the listed ingredients. You can use any butter.

Cut the lemon in half and squeeze juice from one half. You don't need more juice, as the sauce may become too sour. You can substitute the freshly squeezed juice with concentrated juice, but in a smaller amount.

Melt the butter in a cauldron or in a skillet with high sides.

Heat it for about 2-3 minutes, until it begins to change color from pale to a more caramel hue, and add the lemon juice.

Next, add salt, but not iodized—just regular table salt. Mix the sauce; if desired, you can blend it with an immersion blender.
