
Odessa-style sauté
Description
Odesa-style sauté differs from the regular version by the addition of apple. The combination of eggplant, carrot, onion, bell pepper, tomato, and apple creates a wonderful flavor profile and gives the dish a bright, appetizing appearance. This sauté can be served as a main dish or as a side dish.

Take the ingredients for preparing sauté.

Peel the onion, wash it, and finely chop. Place in a frying pan.

Peel, wash, and grate the carrots. Add to the onion. Pour in the sunflower oil and lightly sauté these vegetables for 7–8 minutes, stirring.

Then add the onion and carrots to a heavy-bottomed pot.

Remove seeds from the bell pepper, wash it. Cut into strips and add to the saucepan.

Wash the apple, peel and grate it. Place it in a saucepan.

Wash and peel the eggplants. Slice them into rounds 0.7–1 centimeter thick.

Roll half of the sliced eggplants in flour and place them in a pot with the vegetables and apple.

Chop the tomatoes any way you like. Add to a saucepan.

Add salt and sugar to taste. Pour in 150 ml of water. Cover the pot with a lid.

Simmer the vegetables over low heat for 25–30 minutes until the sauté is cooked. Then add chopped garlic and herbs.
