Catfish with paprika and thyme

Description

The recipe won't take much time. Preheat the oven and lightly spray the baking sheet with olive oil. In a shallow bowl, mix together cornmeal, pepper, thyme, cayenne pepper, 1 tablespoon salt, and 1/2 teaspoon ground pepper. Dredge the fish fillets in the spice mixture, shaking off any excess, and place the fish onto the prepared baking sheet. Bake until the fish is crisp and dark golden brown, for 10 to 12 minutes. Serve immediately, with lemon wedges if desired. Serve hot.
