
Assorted meat solyanka with sausage
Description
The dish is prepared without unnecessary complications. This version of solyanka is made without potatoes. Although beef broth is considered dietary and light, thanks to the smoked meats, the solyanka turns out to be hearty and incredibly delicious. The finished dish can be served at the table.

Step 1

1. Prepare the broth. Place the beef in a heavy-bottomed pot, cover with water, and bring to a boil. Skim off the foam. Then add the peeled onion and simmer for 1.5–2 hours.

2. 10 minutes before readiness, add bay leaf and allspice. Then remove the meat and strain the broth.

3. Separate the meat from the bone and cut it into strips. Do the same with the sausage and ham, and slice the sausages into rounds.

4. Cut the cucumbers into julienne strips, transfer to a saucepan, add a little brine, and cook for 5-7 minutes. Then add to the broth.

5. Sauté the onion in a mixture of butter and vegetable oil, then add tomato paste, a little water, and bring to a boil.

6. Add the sauté to the broth, along with the meat, sausage, ham, and frankfurters. Season with salt, add black pepper, and cook for 10 minutes. Cover with a lid and let it steep for 15 minutes.

7. When serving, drizzle with sour cream, add olives, a slice of lemon, and garnish with herbs.
