
Solyanka with Tomatoes
Description
Perfect for winter stocking. This solyanka made from fresh vegetables will keep the flavors beautifully and delight you in winter. Solyanka is especially delicious with meat dishes and boiled potatoes. If you like, you can strain the tomato liquid after running it through a meat grinder. That will help remove any tough skins that might end up in the solyanka. Jars keep for up to a year in a cool place.

Step 1

Wash the tomatoes, cut the small ones in half, and the large ones into three or four pieces. Place the tomatoes in a large bowl. Wash the bell peppers and green beans, remove the cores, and grate them on a special grater or slice into half-moons. Add them to the tomatoes. Also add chopped parsley to the bowl, season the ingredients with salt and pepper, and mix well.

Step 2

Pass some of the tomatoes (about one kilogram) through a meat grinder. We will need this sauce for the brine. Place the vegetables in the jars and pour the tomato brine over them.

Place the jars in a tall pot, having first poured water into it. Cover the pot with a lid and keep the tomatoes under it for 15–20 minutes. When they settle and the juice rises to the neck, the jars can be sealed.

After you screw on the jars, turn them upside down and leave them that way until the water has completely cooled. Store the finished preserves in a cool place.
