
Rabbit solyanka
Description
The recipe won't take much time. The rabbit solyanka turns out to be very light and filling at the same time. For extra spice, you can add garlic, or substitute tomato with tomato paste. If it's too sour, add a little sugar. You can buy rabbit at a store or market. When buying at the market, choose a rabbit with furry hind legs. This is an indicator that you're actually purchasing rabbit, not another animal. Serve hot.

Prepare all the necessary ingredients for making rabbit solyanka.

Cut the rabbit meat into pieces. Pour oil into a cauldron or casserole dish, like the one I used, and heat it up. Sear the meat over medium heat until golden brown, about 5-7 minutes.

Peel the onion and chop it, then add to the casserole dish with the fried rabbit. Reduce the heat and sauté for 20 minutes, stirring occasionally.

Shred the cabbage into thin strips and place it in a casserole dish with the rabbit and onion.

Remove seeds and stem from the bell pepper, slice thinly into strips, and add to the meat, cabbage, and onion.

Cut the tomato into cubes and place it in a casserole dish.

Peel the potatoes, rinse them, and cut into medium cubes. Place them in a casserole dish with the vegetables and rabbit.

Peel the carrots and grate them coarsely, then place them in a casserole dish.

Season with salt and pepper, then pour in the brine and water mixture. Place over medium heat and bring to a boil. Stir everything, cover with a lid, and reduce the heat. Simmer the solyanka for one hour, stirring 2-3 times to prevent burning. Turn off the heat, let it stand for 10 minutes, then serve.
