Polish-style solyanka

Description

The recipe won't take much time. Polish-style solyanka, or bigos, is essentially sauerkraut with meat. Bigos is usually prepared using a mixture of sauerkraut and fresh cabbage. Smoked meats, tomato paste or tomatoes, prunes, and mushrooms are added. The dish is quite simple, but requires time. However, the result will surely delight you. Aromatic, tasty, and hearty solyanka will make an excellent dinner for the whole family. Serve hot.

    Wash the pork meat and cut it into small pieces. Place on a hot frying pan or saucepan with sunflower oil.

    Sear the meat until a light golden crust forms. Peel, wash, and finely chop the onion. Add to the pan with the meat.

    Peel the carrots, wash and cut them into pieces of any size. Place them in a pan with the pork and onion. Pour in 250-300 ml of water. Cover the pan or saucepan with a lid.

    Simmer the meat with onion and carrot until almost cooked.

    Cut the fresh cabbage into thin strips and add it to the meat.

    Simmer the cabbage with meat under a lid until tender for 10-15 minutes. Then add salt, ground black pepper, bay leaf, and tomato paste.

    Place the sauerkraut in a frying pan, add a little water, and simmer covered for 15–20 minutes until tender.

    Then add sauerkraut to the pan with pork, carrots, onions, and stewed fresh cabbage. Cut the sausage into cubes and add it as well.

    Mix all the ingredients. Add more salt or pepper if needed. Cover with a lid and simmer the bigos for another 7-8 minutes over low heat.

    Polish-style solyanka is ready. Delicious both warm and cold.
