
Mushroom solyanka with tomato paste for winter storage

Prepare the mushrooms. Rinse them thoroughly a couple of times under running water. Peel the skin off the caps and trim the edges of the stems.

Cut the mushrooms into cubes, boil in salted water for 30-40 minutes, then drain the water.

Peel the carrots and boil until half-cooked, then cut into cubes. Cut the sweet pepper into strips and sauté together with the onion, sliced into half-rings, in a frying pan until lightly browned and soft. Mix the vegetables with the mushrooms.

Then transfer the ingredients to a cauldron or pot, add tomato paste, salt, and a little water. Simmer for about an hour. At the end, pour in the vinegar.

Place the vegetables with mushrooms into half-liter jars, sterilize for 45 minutes. Then seal the jars.
