Prepare all the ingredients.

Wash the green tomatoes, pat them dry, and pierce with a fork near the stem.

For the brine, dissolve the salt in clean boiled water.

At the bottom of a clean jar, place a horseradish leaf, half the parsley, a dill umbel, and a couple of peeled garlic cloves.

Fill the jar with green tomatoes. In the empty spaces, add the remaining garlic, dill umbels, cloves, coriander seeds, and mustard seeds.

Pour in the brine.

Cover with a horseradish leaf and parsley. Leave at room temperature for 1.5 weeks. If the tomatoes float, you can place a small weight on top of the jar.

Then rinse the tomatoes and herbs, and bring the brine to a boil and let it cool.

Place the tomatoes with herbs back into a clean jar and pour in cold boiled brine. Seal the jar and store it in a cool place. The tomatoes will be fully ready after 3 weeks.
