
Salted Honey Mushrooms in a Barrel
Description
I present a classic recipe for preparing salted honey mushrooms in a barrel. These are unusual salted mushrooms, because the honey mushrooms are steeped in a wooden barrel, which gives them a distinctive flavor. Sort through the honey mushrooms and wash them thoroughly. Sprinkle a layer of salt on the bottom of the barrel. Then arrange the mushrooms cap-side down, layering with salt. Also add dill, black currant leaves, and peppercorns. Place a weight on top; the mushrooms will be ready in a week.

Drain off the excess brine (over the course of a week) and add the mushrooms. The barrel, however, should be kept in a cool place.

Honey mushrooms are served either plain or drizzled with vegetable oil and sprinkled with herbs and green onion.
