Picking and preserving honey mushrooms is very simple—these little mushrooms grow in fairly large clusters, and salting and marinating them is not difficult at all, so any homemaker, even an inexperienced one, can handle such a task. And today I want to share with you my recipe for salted honey mushrooms for winter, which I use every year and which I like more than others. It has one secret ingredient—horseradish; thanks to it, the mushrooms keep for a very long time and their flavor turns out very interesting, slightly piquant. In winter you can simply take out a jar of honey mushrooms, dress them with oil and fresh herbs, and you will get an excellent holiday appetizer with this simple recipe for salted honey mushrooms for winter. 1) First, sort through the mushrooms, remove debris, and rinse the honey mushrooms under running water several times. 2) After that, put them in a pot, cover the mushrooms with salted water, and leave for half an hour. 3) After 30 minutes, drain the honey mushrooms in a colander and rinse them thoroughly. Put them back in the pot, cover with water, and place on the heat; boil for 15 minutes from the moment of boiling, remembering to skim off the foam from time to time. 4) While the mushrooms are boiling, we will prepare the spices: peel the horseradish and grate it on a fine grater, slice the garlic into thin pieces, and chop the dill. 5) When the mushrooms have boiled for 15 minutes, drain them in a colander and wait until the water runs off. Then begin layering the honey mushrooms in a pot, sprinkling each layer with salt, spices, garlic, dill, and horseradish. Then cover the mushrooms with cheesecloth folded in several layers, place a plate on top, and set the mushrooms under a weight. 6) After 10 days, transfer the honey mushrooms to clean jars and store them in the refrigerator.
