
Salted Butter Mushrooms for Winter

Winter preservation at home. Here is a simple recipe for preparing salted butter mushrooms for winter storage. The finished preserve should be kept in a cool place—this could be a refrigerator, cellar, or basement. They can be eaten within a few days, but of course it will be better if the butter mushrooms sit longer and soak thoroughly in the brine. Good luck

Step 1

Sort through the maslyata, clean off dirt, and rinse. Boil in salted water for 15–20 minutes, then drain in a colander to remove the water.

Meanwhile, prepare the brine from the listed ingredients. Bring to a boil, add the mushrooms, and cook for another 5 minutes.

Arrange the butter mushrooms in sterilized jars, pour brine over the top (2 tbsp vinegar per 1 liter). Seal with lids and store in a cool place.
