
Salted Salo for Long-Term Storage
Description
It's suitable both for festive occasions and for everyday use. For the lard to keep well for a long time, it's best to salt it in a glass jar, under a tightly sealed metal lid. Salted lard can also be stored in the freezer—this is probably the simplest and most long-lasting option.

Prepare the salo and salt. Use regular salt, not iodized!

The rind of the salo must be scraped well with a sharp knife. Then cut the salo into small pieces.

Rub each piece of salo with salt.

Wash the jar thoroughly and sterilize it. Then place a little salt on the bottom. Fill the jar with salo, sprinkling each layer with salt.
