1. Wash the fish, peel the onion, and prepare all the ingredients for the brine.

2. Remove the innards, head, and tail from the mackerel; if desired, remove the skin. Thinly slice the onion.

3. To prepare the brine, combine salt, sugar, spices, and water in a saucepan. Bring to a boil and stir until the salt and sugar are fully dissolved. That's it—the brine is ready.

4. In a container or jar, arrange the mackerel cut into pieces, alternating with onion. Pack fairly tightly so no space is left.

5. Pour in the brine, place a small weight on top, and refrigerate for 2–3 days. Before serving, you can drizzle the fish with vegetable oil or vinegar, or garnish with herbs.
