
Salted Red Fish: Arctic Char
Description
The appetizer is quick and easy to prepare. Salted flounder is a wonderful appetizer not only on weekdays, but also for a festive table. Be sure to prepare this fish several days in advance so it has time to salt properly. Serve with herbs and sauce.

Prepare the listed ingredients. Gut the whitefish, remove the scales, rinse, and fillet. Remove the large bones.

Into a deep container, add salt, ground black pepper, and bay leaves. Pour in cold water and mix thoroughly until the salt dissolves. The container must not be aluminum!

Place the cleaned fillet in the brine and refrigerate for at least 24 hours. The smaller the fish pieces, the faster they will cure.

After the specified time, the fish will be lightly salted. If you prefer saltier dishes, leave it in the brine for another 1–2 days, but be sure to keep it cold.

Remove the salted cisco from the brine and slice into pieces; serve with lemon and bread.
