
Cornelian cherry juice
Description
The drink is quick and easy to prepare. The cornel cherry juice turns out very rich and pulpy. This juice can serve as an excellent base for making fruit drinks, jelly, homemade marmalade, and sauces. It can also be a source of vitamins during the cold season, as it contains a wealth of beneficial vitamins and minerals.

Prepare the ingredients for making juice.

Carefully sort and rinse the berries through a colander.

Place the berries in a wide-bottomed saucepan, pour in a glass of water, and set over medium heat to warm.

After heating, the berries release juice more readily.

Transfer the berries to a colander and use a masher to press the pulp through. The pits will remain on the sieve. This is the most difficult part of preparing dogwood juice.

Place the berry pulp and seeds back into the saucepan, add about two cups of water, and heat again if the berry pulp has not yet sufficiently separated from the seeds. Then strain once more through a colander or sieve. After this, you can use the remaining pulp to make a very tasty drink.

Add about 100 grams of sugar, or more to taste, to the resulting juice. Heat until boiling, but do not boil.

Prepare sterilized glass jars with lids and pour the juice into them. Place a cloth at the bottom of a large, wide pot, set the jars with juice inside, cover with lids, fill with hot water up to about three-quarters of the jars' height, bring to a boil and sterilize for 15-20 minutes. Then seal the jars, turn them upside down and cover with something warm, such as a blanket, until completely cooled.
