
Soy kefir
Description
The recipe won't take much time. You can omit the sugar, in which case the soy kefir will be slightly more sour. If the final consistency separates, simply blend it until smooth. Store the finished kefir in the refrigerator for up to 5 days. It tastes like regular kefir, and thanks to the added probiotics, its health benefits are preserved. Serve chilled.

Prepare all the ingredients.

Soak the cashews in water for 4-6 hours. Then rinse them thoroughly.

Grind the nuts, soy milk, and sugar in a blender.

Transfer the mixture to a clean glass jar, add probiotics. Stir with a plastic or wooden spoon. Do not use metal!

Cover the jar with cotton cloth and leave it at room temperature for 48 hours. After this time, the soy kefir will thicken and acquire a characteristic sour-milk flavor.
