Soda bread with flaxseeds

Description

Homemade baked goods for tea. An important nuance when preparing yeast-free bread based on baking soda is the speed of kneading the dough. This should be done within 2–3 minutes to avoid prolonged interaction of active ingredients (baking soda and citric acid) during kneading, which can lead to poor dough rise during baking and disrupt its structure.

    As can be seen in the photo, making soda bread requires fairly simple ingredients. If flaxseeds are not available, they can be replaced with another healthy ingredient (dried herbs, sunflower seeds, pumpkin seeds).

    First of all, pour 50 ml of hot water (taken from the total amount) heated to 85–90 degrees over the flaxseeds (do not bring to a boil). This will soften them and prevent them from falling out of the finished product.

    While the seeds are steeping, combine the sifted flour, salt, and baking soda in a mixing bowl. A whisk is convenient for more effective blending of the dry ingredients.

    When the flaxseeds have swollen (after 3-5 minutes), combine them with the dry mixture.

    Dissolve the citric acid in the main amount of water (200 ml) and pour it into the bowl with the dry mixture, quickly knead a soft dough.

    Place the dough in the prepared pan, bake for 10-15 minutes at 70 degrees, then continue baking for another 35-40 minutes at 200 degrees. Alternative method: place the bread in a cold oven, set the temperature to 160-170 degrees, and after 10-15 minutes increase the baking temperature to 200 degrees.

    During this baking process (in two stages), the soda bread rises well and bakes evenly.
