Prepare all the necessary ingredients. Boil the chicken breast in advance in lightly salted water.

Melt a piece of butter in a small skillet or saucepan.

Add finely chopped onion and cook until translucent.

Then add the flour and stir vigorously until the flour is fully combined with the onion and butter. After that, pour in and mix. Cook the sauce over low heat until thickened.

When the sauce thickens, add the sausage cheese grated on a fine grater and mix well. Keep stirring until the cheese melts. Then remove from the heat and let the sauce cool.

Finely chop the boiled chicken breast.

Add part of the sauce and mix. Do not add all the sauce at once, so the mixture does not become too runny.

I only needed about 2/3 of the sauce for the croquette mixture to be thick enough. Still, the mixture needs to go in the refrigerator for 15–20 minutes so it cools and becomes thicker and more viscous.

Meanwhile, prepare everything for breading. In one bowl, beat 1–2 chicken eggs with salt and pepper. Pour flour and breadcrumbs into separate small bowls.

Form small balls from the chicken mixture. Roll the balls first in flour, then dip them in egg, and finally coat them in breadcrumbs.

Deep-fry the balls until golden. Place the finished croquettes on paper towels.
