Cottage cheese-filled pastries

Description

Sovchiki are a popular and beloved pastry made from shortbread dough with a cottage cheese filling. During baking, the dough slightly absorbs moisture from the cottage cheese, becoming very tender, while the cottage cheese filling turns creamy and soft. Be sure to add vanilla sugar to both the dough and the filling to make the sovniki more aromatic. Optionally, you can add some raisins or nuts to the cheese mixture for variety. Sovniki stay soft for up to 4 days. Serve them cooled or slightly warm.

    1. Mix the flour with salt and baking powder. Rub the soft butter into a homogeneous mixture with sugar and vanilla sugar. Add the egg.

    2. Combine both mixtures and quickly knead the dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Mix well-drained cottage cheese with sugar and vanilla sugar.

    3. Add chicken egg white, semolina, and starch. Mix the filling well. Roll the dough into a rope and divide it into 12 pieces. Roll each piece into a 4-5 mm thick round and place the filling on half of each round.

    4. Cover with the second part of the dough. Place the cottage cheese pastries on a baking sheet lined with parchment paper, brush with lightly beaten egg yolk, and bake in a preheated oven at 190°C for 20-25 minutes.
