They used to be made strictly to GOST standards, and these are the ideal proportions of ingredients, the right recipe, and impeccable flavor. So these sconychiki will never let you down or disappoint. You can serve them with tea or coffee.

    Prepare all the necessary ingredients.

    First, make the dough. Sift the flour into a bowl (set aside 1 tablespoon), dice the cold butter, add salt, and rub the mixture into a coarse crumb. Work quickly so the butter does not melt.

    Beat a chicken egg into the flour crumbs, add sugar and baking powder. Mix.

    Quickly gather the dough into a ball. Wrap it in plastic wrap and refrigerate for 1 hour.

    To prepare the filling, mix cottage cheese, sugar, vanilla sugar, flour, sour cream, and egg white. Mash the mixture with a fork to break up large lumps of cottage cheese.

    After the time has elapsed, take the dough out of the refrigerator. Divide it into 8–10 equal parts. Roll each piece into a ball.

    We begin shaping the cottage cheese sochniki. For this, take one ball of shortcrust dough and roll it into a round flat disk. If needed, dust the work surface very lightly with flour. Spread about 1 tablespoon of filling over half of the disk.
