Description
Perfect with tea and coffee. To make the sochniki tender, do not knead the dough for too long. It will tighten and become tough after baking. Also, be sure to chill the dough in the refrigerator. It is better not to prepare the filling in advance so that the cottage cheese does not release liquid. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Melt the butter (or margarine). Let it cool until warm.

Add sugar, egg, and sour cream to the melted butter. Mix well.

Add flour, baking powder, salt, and vanillin. Quickly knead the dough. It should not be too dense.

Round the finished dough into a ball, wrap it in a bag, and refrigerate for 30 minutes.

10 minutes before the dough finishes chilling in the refrigerator, make the filling. In a bowl, mix 1 egg white with 1 tbsp. of sugar.

Add cottage cheese, flour, vanillin to taste, and a pinch of salt. Mix.

Take the dough out of the refrigerator. Divide it into 11–12 pieces. The average weight of each piece should range between 55–65 grams.

Roll each piece into a sheet 0.5 cm thick. Place a tablespoon of filling on the edge of the flatbread.

Cover the filling with the free edge of the dough piece.

Place the prepared sochni on a baking sheet lined with parchment paper. Brush with egg yolk mixed with 1 tbsp of water. Bake in an oven preheated to 180 degrees for 25–30 minutes. Take into account the specifics of your oven.
