Sochniki with Cottage Cheese Made from Rye Flour

Description

The recipe will not take much time. Do not be put off by the rye flour in the dough—it is pleasant to work with. Dust the surface with flour and it shapes easily. The finished pastries are less crumbly than classic sochniki, but they are soft and moderately sweet. Note that the filling should be rather dry than wet. Too much moisture can make the sochniki soggy and they will not bake through well. Bear these points in mind and your bake will reward you with its flavour.

    Prepare the necessary ingredients.

    Prepare the dough. In a bowl, combine the egg with salt and sugar. Mix with a fork.

    Add soft butter and sour cream. Mix. You don’t need to whip them—it’s enough for the ingredients to simply combine.

    Pour in both types of flour and baking powder for the dough.

    Start mixing with a fork. As soon as the dough begins to come together into clumps, knead with your hands. While kneading it will stick to your hands—that’s normal for rye dough. Dust your hands with flour and kneading will be easier. The finished dough should be soft: it shouldn’t crumble or stick too much to your hands and the work surface.

    Sprinkle the table with a little rye flour and lay out the dough.

    Roll out the dough into a sheet 0.3 cm thick. Using a cutter, cut out circles 9 cm in diameter.

    Make the filling. In a bowl, mix together the cottage cheese, sour cream, egg, salt, and sugar. Stir until combined.

    On each prepared base, place one heaped tablespoon of filling. Cover with a half-circle on top, pressing lightly to form a sochnik.

    Line a baking sheet with parchment paper. Arrange the sochni on top. Brush with beaten egg. Bake in an oven preheated to 180°C for 20–25 minutes. Allow for how your oven behaves.

    When the baking time is up, take the sochniki out of the oven. A golden-brown bottom crust will tell you the pastries are done.
