
Cheesy pastries with cottage cheese
Description
This dish is well-known to everyone from childhood, and besides its delicious taste, it is extremely beneficial. Sychni are small pastries filled with cottage cheese. The name speaks for itself, as the baked goods turn out very juicy. Don't doubt it—this dish will surely please both adults and children. You can improvise while cooking, adding raisins and vanilla to the filling (optional). This will make the sychni more aromatic and sweeter. Serve warm or chilled. Perfect with tea.

We'll divide all the work into two stages: dough and filling. First, take the butter out of the refrigerator in advance so it softens slightly. Beat the butter and sugar until smooth, then add sour cream. Next, add the egg to the dough. Mix everything thoroughly until it reaches a creamy consistency.

Sift the flour with salt and baking powder in a separate bowl, mix well, then add to the dough. Set aside in the refrigerator for 15 minutes so it firms up and becomes more elastic for shaping.

Now we move on to the filling. We need to separate the egg white from the yolk. The yolk will be used to brush the top, and the white will go into the filling. Add cottage cheese, sour cream, semolina, sugar, and vanilla to the egg white. Mix thoroughly until no lumps remain.

Take the dough out of the refrigerator and divide it into 14–16 pieces. Roll out the dough into flatbreads, place the filling inside, and press the edges together, but do not completely seal them. Brush the pastries with egg yolk and bake in a preheated oven at 220°C (428°F) for 15 minutes.
