
Potato-filled pastries
Description
The pastry is simple and quick to prepare. My grandmother already knew this recipe for making potato-filled pastries—when after a family lunch all the delicious food was eaten and only dry side dishes remained, the mashed potatoes were "recycled" in exactly this easy way. Filling, tasty, and very economical—this is what homemade potato pastries are all about. They can be served with tea or coffee.

1. Thoroughly wash the potatoes and boil them in their skins. It's better if they become slightly mushy rather than remaining undercooked.

2. Peel and mash as you normally would—using a mixer, blender, or masher. Season with salt and pepper to taste. You can add sour cream or an egg, depending on your preference.

3. With moist hands, shape the mashed potato into a patty and thoroughly coat it with flour on all sides.
