
Traditional Sochivo
Description
A tasty appetizer for any gathering. Traditionally, sochivo is cooked from rice, peas, or wheat. It is seasoned with various spices, honey, raisins, poppy seeds, and nuts. According to ancient Slavic traditions, the grain symbolizes the resurrection of life. The appetizer is ready. Serve immediately.

1. First, to plump the raisins, pour boiling water over them. Rinse the rice and cover it with cold water. Place the pot of rice on the heat and bring to a boil.

2. Drain the rice in a colander and let the water run off. Rinse with cold water. Cover the rice with cold water again (add plenty of water), without stirring, and cook until done. Then drain the water and let the rice cool slightly.

3. Shell the nuts (to make it easier to remove the skins from almonds, you can scald them with boiling water first), then crush or grind the nuts in a coffee grinder. Mix the sugar and nuts.

4. Add a little boiled water (it should form a paste). Now mix the nut mixture with the rice, and add the raisins.

5. Then mix the powdered sugar with cinnamon. Spread the porridge on a large plate and sprinkle the cinnamon-sugar mixture on top.
