
Rice Pudding
Description
Kutia can be made from wheat or rice. Either option will be good. Additions can also vary: poppy seeds, raisins, dried apricots, prunes, nuts, and so on. Choose according to your taste and don't be afraid to experiment! On Christmas Day, this dish should be the main one on the table.

1. This version of sochiva is prepared from rice with the addition of nuts, raisins, and citrus fruits.

2. Pour water over the rice and place on the heat. Wait until it boils.

3. When the grain comes to a boil, drain the water through a colander. Then transfer the rice back to the pot.

4. Pour water again and now cook the rice until done. Rinse only under cold water.

5. Salt a second time when the grain comes to a boil.

6. While the grain is cooking, you can grate the nuts. We will need almonds and hazelnuts. It's better if the nuts are roasted.

7. I usually grate the nuts by hand, but you can also do it in a blender.

8. Mix the nuts into one mass.

9. Now pour water over the poppy seeds (water level should be 1 finger above the surface). Place on the stove.

10. Cook until the water has completely evaporated. This takes about 15 minutes. Set aside and let cool.

11. While the poppy seeds are cooking, soak the raisins in water and let them sit. The water should be at room temperature.

12. Add honey (three tablespoons) and mix.

13. It's better to use a masher—thoroughly crush the poppy seeds with honey, then mix into a uniform mass.

14. Now add orange juice, nuts, and raisins (previously squeezed dry) to the mixture and gently stir.
