
Semolina pudding with lemon
Description
The recipe won't take much time. Kutya is traditionally prepared with whole wheat grains, along with poppy seeds, raisins, fruits, and nuts. Honey is also a key ingredient for this dish. You can even use it melted—however you prefer. Serve chilled.

1. During the Christmas holiday season, kutya holds a place of honor—a traditional dish that must be present on every table on this day. We will prepare it using wheat, adding lemon juice, poppy seeds, raisins, honey, and nuts.

2. Soak the grain for a couple of hours, or preferably overnight, in cold water. After that, cook until fully done.

3. Take poppy seeds and pour boiling water over them. Let them sit for some time.

4. Grind the nuts in a blender, or you can leave them chopped—it's up to your preference.

5. Strain the poppy seeds through a sieve and add honey. Grind the ingredients with a pestle, then mix until smooth.

6. Add lemon juice. Honey can be melted and poured into our compote.

7. After that, add all the remaining ingredients and mix everything well.

8. At the very end, add raisins or prunes (to taste).
