
Smørrebrød with Herring, Beet Puree, and Potato
Description
Perfect with a meal and drinks. There are many ways to prepare this open-faced sandwich. Smørrebrød can be an excellent hearty snack during the day or a splendid, simple appetizer at a festive table. You can garnish such sandwiches to your taste by adding a slice of pickled gherkin or a boiled egg. They can be served warm or chilled.

Prepare all the ingredients. Wash the potatoes and beets under running water, and boil until tender. Potatoes usually need about 20 minutes; beets will be ready in about 40–50 minutes.

Peel the beets and potatoes. Also cut off the head and tail of the herring, remove the skin, innards, and backbone. Cut the herring fillet into thin slices about 2 centimeters thick.

Toast rye bread slices in a dry skillet.

Then wipe the pan with a paper towel, pour in vegetable oil, and fry the potato slices in it until golden brown.

Place the chopped beet, sour cream, mustard, salt and pepper to taste, and a little vegetable oil in the blender bowl.

Blend everything until smooth and paste-like, then taste.

Spread the slightly dried bread slices with beet puree, and place several potato slices on top.

Place herring slices on the layer of potatoes and garnish them with parsley leaves.
