Description
This cream is very simple and quick to prepare, but there are a few nuances to keep in mind. The sour cream must be very high-fat; otherwise, the cream will become runny when whipped. Sometimes sour cream with 30% fat or higher isn't available in stores. In that case, do the following: buy sour cream with 15-20% fat, place it in a sieve lined with cheesecloth, cover with a lid, and let it sit in the refrigerator for 7-8 hours, or preferably overnight. You'll end up with very thick sour cream. From 350 grams of store-bought sour cream, you'll get about 200 grams. Use soft, smooth cottage cheese without lumps. Add powdered sugar to the cream to taste.
