Prepare the ingredients.

Crack the eggs into the bowl for the dough and beat them until foamy.

Gradually add the sugar, continuing to beat until light and fluffy.

Pour in the melted butter. The butter must not be hot. Add 200 grams of sour cream of any fat content and beat everything together.

Add a pinch of salt, vanilla sugar, and baking soda slaked in vinegar to the dough, and mix.

Add the flour, mix the dough until smooth.

Line the bottom of the baking dish with parchment paper, grease the dish with butter, and dust lightly with flour; tap off the excess flour. Put the dough into the prepared dish and level the top. Bake in the oven at 180°C for about 45 minutes. Doneness can be checked with a wooden toothpick.

While the sponge cake bakes, prepare the sour cream frosting. To do this, whip cold sour cream (from the refrigerator) with powdered sugar and vanilla sugar. You may substitute granulated sugar for the powdered sugar; in that case, whip until the sugar dissolves. Refrigerate the finished frosting until you are ready to use it.

Cool the finished cake layer, then cut it in two. Trim off the top part of the layer to make crumbs.

Spread half of the sour cream cream on the bottom layer. Place the second layer on top and spread the cream over the top of the smetannik.
