Roll out the puff pastry.

Peel the apples and cut them into small cubes. Mix the apples in a bowl with sugar and cinnamon.

Place the apples in sugar and cinnamon in the microwave for 2 minutes. The apples should bake slightly and release juice. If this hasn't happened after 2 minutes, microwave them a bit longer.

Divide the puff pastry into squares. Brush the edges of the square with egg yolk.

Visually divide the square into two triangles. On one triangle, closer to the visual dividing line, place the apple filling—1 tablespoon. Then cover with the second triangle.
