
Blueberry pastries
Description
Delicious pastries for the whole family. I always keep a few packs of puff pastry in my freezer. During blueberry season (although you can also use frozen berries or blueberry jam), I bake blueberry turnovers. I cook the berries with sugar and add starch to thicken the filling. However, you can also use fresh berries simply mixed with sugar (without cooking). It's all up to your taste and imagination. Here's my recipe. Serve warm or chilled. Perfect with tea.

Sprinkle the table with flour, place the sheets of dough on it and defrost. Meanwhile, prepare the filling.

Clean and rinse the blueberries. Place them in a saucepan and sprinkle with sugar. Let them sit and "get acquainted" with the sugar for about 10 minutes. Cook over low heat until the sugar dissolves, stirring gently. Add the starch, mix quickly, cook for one more minute, then remove from heat.

Preheat the oven to 180 degrees. Lightly roll out the dough and cut it into squares. Place one teaspoon of filling on each square.

Brush the corners of the square with egg. Join the opposite corners to form little envelopes. Firmly seal all the edges of the pastry!

Place the pastries on a baking sheet lined with parchment paper. Keep in mind that the pastries will spread outwards during baking, so arrange them on the sheet with sufficient space between them. Using a pastry brush, gently brush the top of each pastry with lightly beaten egg.

Place in a preheated oven and bake for 25-30 minutes.
