Perfectly pairs with tea and coffee. These pastries are great because the filling can be absolutely anything: nut cream, chocolate, berries, or fruits. The main highlight of these pastries is their shape. As for the size, it's entirely up to you—you can decide how big your pastries will be. I highly recommend noting this preparation method. 1. To prepare the filling, in a deep bowl combine softened butter with sugar.

2. Rub everything until homogeneous.

3. Add the egg yolks and almond flour. For flavor, I recommend adding a little rum.

4. Mix everything thoroughly and refrigerate for about 15 minutes.

5. In this case, apricots will be used for the filling. Wash them, dry, and remove the pits.

6. Roll out the dough and cut out a smooth circle. Place it on a baking sheet lined with parchment paper.

7. Spread the almond filling and fruits in an even layer.

9. Make a small hole in the center. Use a knife to create a decorative pattern and form wavy edges. Brush with egg yolk and place in a preheated oven at 180 degrees. Bake the pastries until golden brown, about 20 minutes.
