
Kefir Puff Pastries

Prepare all the ingredients.

Sift the flour into a deep bowl, add the butter cut into cubes, and rub the flour with the butter by hand until it forms crumbs.

Add baking soda and kefir.

Knead the dough. If necessary, add a little more flour. The dough should not stick to your hands, but should remain soft and pliable. Form it into a ball, wrap it in plastic wrap, and place it in the refrigerator for 1 hour.

Prepare the crumble. For this, combine the flour, butter cut into pieces, and sugar. Rub everything into a crumble and place it in the refrigerator.

After an hour, remove the dough from the refrigerator and divide it into four parts.

Roll out a piece of dough into a circle about 24 cm in diameter and sprinkle with crumbs.

Roll out the next piece of dough and place it on top, also sprinkling it with crumbs and so on in order. The top should be sprinkled with crumbs. Cut the circle into 8–12 pieces.
