
Layered cake with berries
Description
To make this cake, I used fresh berries. If berries are not available, you can replace them with fruits. In winter, for example, I make similar cakes with bananas and pineapples. Still, berries have their own charm, so this dessert is especially delicious when made with them. Serve warm or chilled. Perfect with tea.

Step 1

Take the puff pastry out of the freezer in advance so it can thaw naturally at room temperature. Then sprinkle a little flour on the table and place the pastry on it. Cut the pastry into proportional layers. Roll out each layer with a rolling pin until it doubles in size.

Bake the cake layers in the oven at 180 degrees (approximately 10 minutes per layer). Meanwhile, soak the gelatin in cold water. Beat the cottage cheese with sugar, add vanilla sugar. Heat the gelatin until dissolved (but do not boil!). Mix the cooled gelatin with the cottage cheese mixture. Cut the cake layers in half. Place the first layer on the bottom of a mold lined with plastic wrap.

On the first cake layer, spread an even layer of part of the cottage cheese mixture. Then add berries. Repeat until the filling is used up. Reserve one cake layer for the topping.

Spread the remaining curd mixture over the top layer of dough. Make crumbs from the leftover dough (by hand or in a blender), and use them to decorate the cake. This cake should be left to set for at least 8 hours.
