
Layered pie with cheese and herbs

To quickly make a layered pie with cheese and herbs, I suggest using ready-made puff pastry. Since it is usually sold frozen, it needs 1.5–2 hours to thaw properly before cooking.

While the dough is defrosting, you can prepare the filling. Wash the herbs and dry them thoroughly with a towel or paper towels, then finely chop them.

Grate the hard cheese on a grater into a separate plate. It doesn't really matter whether you grate it coarsely or finely, so choose whichever way you prefer.

Crumble the feta or brinza cheese with a fork, add one egg to the same bowl, mix, then add the grated cheese and chopped herbs, and mix again. Do not add salt to the filling, as the cheeses already contain salt; otherwise, you might over-salt and spoil the pie.

Cut the sheets of ready-made dough into strips about 10 cm wide (if necessary, roll out the dough slightly with a rolling pin).

Place the filling on the resulting strips, carefully roll up the dough, sealing the edges well.

Take a baking pan of suitable size and line it with parchment paper. Carefully, starting from the center, arrange the resulting "sausages" in the baking dish, placing the seams facing down. To prevent the filling from leaking out of the future pie, the seams of the "sausages" (if you have several pieces) must be pinched together very thoroughly. To make the pie look more attractive after baking and to ensure a nice golden crust, brush it with lightly beaten egg and sprinkle sesame seeds on top.

The pie should be placed in a very well-heated oven (around 200 degrees) and baked for about 30-40 minutes.
