
Puff Pastry Pie with Sweet Cherries
Description
Perfect with tea and coffee. The pie turns out with a very delicate and aromatic filling. You can replace sweet cherries with other berries, and ricotta with cottage cheese or cream cheese. If you use cottage cheese, choose full-fat and rub it through a sieve. Almond flakes can be perfectly replaced with any chopped nuts. Serve cooled or slightly warm.

Prepare all the necessary ingredients to make a puff pastry pie with sweet cherries. Sort through the berries, wash them, and pat dry.

Remove the stems and pits from the berries.

Place the ricotta in a bowl, add the sugar, vanilla sugar, starch, and sour cream, and mix.

Sprinkle the work surface with flour and roll out the dough slightly. Transfer it to an 18-centimeter diameter pan, letting the edges hang over.

Place the ricotta filling inside the dough and bury the cherries in it. Sprinkle everything with some sliced almonds.

Lay the edges of the dough over the top and sprinkle with the remaining petals.

Place the pan with the pie in a preheated oven and bake at 180°C for 30–40 minutes, until done. The crust should turn golden, and the filling should stop wobbling and sticking when touched.

Remove the finished pie from the oven and immediately grate chocolate over the top. Let the pie cool completely and serve.
