
Layered khinkal
Description
The dish is prepared without unnecessary complications. Khinkal is an ideal side dish, so it is usually served with meat, vegetables, and fresh herbs. Cooking khinkal in a cauldron together with vegetables and meat infuses it with their juices and aromas. Alternatively, you can place the raw khinkal rolls onto a greased steamer basket and steam for 15–25 minutes, or until cooked through. The cooking time will depend on the thickness of the rolls. Once ready, the dish can be served.

Prepare all the necessary ingredients for making layered khinkali. Peel and wash the vegetables, and clean the meat from sinews.

Pour vegetable oil into a cauldron and heat over high heat. Cut the beef into large pieces and place into the cauldron. Sear the meat until a golden crust forms, about 3-4 minutes.

Cut the carrots into thick julienne strips, slice the onion into thin strips and add to the cauldron. Season with salt, add spices and pepper.

Cut the potatoes into wedges, cut the bell pepper into large pieces, and place them in a cauldron. Pour in hot water and bring to a boil, then add herbs. Cover the cauldron with a lid, reduce the heat, and cook for one hour.

30 minutes after starting to cook the meat with vegetables, begin preparing the khinkali. To do this, pour warm water and vegetable oil into a bowl, add the yeast and salt, and mix until smooth. Sift the flour into the liquid and knead a firm dough. Shape the dough into a ball, place it in a bowl, cover, and let it sit in a warm place for 30 minutes. During this time, the dough will rise and become pliable.

Divide the dough into two parts. Lightly flour the work surface and roll out one part into a thin rectangle. Brush it with melted clarified butter and roll it up tightly into a log. Cut the log crosswise into 2-centimeter pieces. Repeat the same process with the other piece of dough.

Place the hinkali pieces on top of the vegetables and meat, cover with a lid, and cook for another 20–30 minutes until the hinkali are done.
