
Layered cookies with cottage cheese
Description
Homemade pastries for tea. Puff pastry goes perfectly with cottage cheese and raisins. But if you're tired of this same combination of flavors, you can try adding apples, prunes, or dried apricots to the filling—indeed, any dried fruits you like. For freshness, add vanilla and lemon zest to the cottage cheese. Serve this dessert with tea or fruit juice, either cooled or slightly warm.

Preheat the oven to 180 degrees.

Mix the cottage cheese with sugar, egg, and raisins until smooth. Make sure there are no lumps. If necessary, pass the cottage cheese through a meat grinder before preparing.

Thaw the puff pastry and unfold it onto a lightly floured board. Roll the dough slightly and evenly spread the cottage cheese mixture over it.

Roll the dough into a log and cut it into 2 cm wide slices with a sharp knife. Place the ring-shaped cookies onto a baking sheet lined with parchment paper.
