
Plum upside-down cake
Description
Perfect with tea and coffee. This upside-down plum cake is amazing both hot and cold. Its sweet dough pairs perfectly with the slightly tart "filling." I don't use overly sweet plums for this cake, as a syrup made from sugar and butter is added separately. The cake bakes for 30–40 minutes and can be served either warm or chilled. Serve warm or cooled. Ideal with tea.

1. Rub the eggs with sugar, then start beating vigorously. It's best to do this with a mixer.

2. Gradually add the baking powder, milk, a little oil, and flour. Continue beating.

3. The dough should have the consistency of pancake batter. Set it aside and start preparing the "filling."

4. Thoroughly wash the fruits. Halve the plums and remove the pits.

5. In a baking dish, melt a little sugar and butter.

6. Place the plums on the resulting syrup with the pits facing down.

7. Place the dough on top, spreading it evenly over the entire surface. You can grease the sides of the pan with oil.

8. Place our baking dish into a preheated oven at 200°C (392°F) and bake the upside-down plum cake for 30 minutes. You can slightly reduce the oven temperature during baking to prevent the cake from burning.

9. After baking, let the pie rest for a while, then remove it from the mold by turning it upside down. A round pan with removable sides works best for this.
