
Plum compote (master class)
Description
The drink is quick and easy to prepare. Delicious, aromatic, perfectly balanced sweet-and-sour plum compote is an excellent preserve for winter. You can drink it as is, serve it alongside your meal, or use it to make kissel.

Step 1

Sort the plums and remove any spoiled ones. Rinse under running water. Prick the fruits in several places with a toothpick or fork to prevent them from cracking during sterilization.

In a saucepan, combine water, sugar, cinnamon, and cloves. Bring to a boil and cook the syrup until the sugar dissolves. Place plums into a sterilized 1.5-liter jar, pour over with hot syrup, and cover with a clean lid.

Place the jar with plums into a pot with hot water. The water should reach the "shoulders" of the jar. Bring the water to a boil and sterilize the jar for 15 minutes. Seal with a lid. Cool at room temperature.
