
Five-Minute Plum Jam
Description
A preservation recipe without unnecessary complications. As is well known, plums contain a great deal of pectin, so there is no need to add any gelling agents to the jam. Five-minute plum jam prepared at home takes about two hours in total, and it can be stored all winter in a cool place. Jars keep for up to a year when stored in a cool place.

1. Before you start cooking, prepare the plums carefully: wash them and remove the pits. The halves should be even.

2. Put the plums in a saucepan, add the lemon and sugar. Let stand for 30–50 minutes so the plums release their juice. Place over heat and bring to a boil. Simmer over low heat for about 10 minutes, stirring constantly (so the sugar does not burn) and skimming off the foam.

3. Pour the hot jam into pre-prepared jars and seal immediately. If the consistency is not to your liking, you can add more sugar at the start and cook for about 10 minutes longer.
