
Quick Plum Jam
Description
Homemade preserves keep for a long time. This wholesome fruit delights with its wonderful flavor and a light tang. If you don't like jam that is too cloyingly sweet, make it using this recipe. Plums are easy to work with, and the finished dessert from them is a real treat. Quick plum jam is ready fairly fast—in just three 10-minute sessions with a short break between them. Serve at the table or keep in the pantry.

1. For this jam, use plums that are medium ripe. I prefer sweet varieties. Wash the fruit thoroughly and let the water drain off.

2. Cut in half and sprinkle with sugar. Let the plums stand for about 40 minutes so they release their juice.

3. After that, place the pot over low heat and simmer the plums three times for 10 minutes each, with a half-hour interval between each simmer. If, of course, you prefer thick jam, you will need twice as much sugar, and you should cook it in three stages with 10-hour intervals between them.

4. Pour the plum jam quickly into sterilized jars right away and seal them. Store this jam in the pantry or in a cool place (cellar or refrigerator).

5. Despite the fact that the jam is made in a hurry, its taste remains invariably delicious. Children and adults alike enjoy this treat with tea or use the jam for baking.
