
Plum and honey cake with poppy seeds
Description
The plums for such a pie should be overripe and juicy. And they don’t have to be sweet; a hint of tartness works well in this pie. The pie turns out fragrant, with a moist crumb. On the second day it is even tastier. It can be served with tea or coffee.

Remove the skin from the plums and discard the pits. Mash the flesh together with half a banana. Add 2 tablespoons of sugar, honey, and whisk the mixture with a mixer. While slowly drizzling in the oil, whisk the mass well until smooth.

Add the sifted flour with baking soda (2 types). You can use the flours in equal parts; the pie will be slightly drier and more crumbly.

Add dry poppy seeds and cinnamon to the dough. Mix.

Pour the balsamic vinegar into the dough and mix well.

Pour the batter into the prepared pan, sprinkle a spoonful of sugar on top, and bake in a preheated 200 °C oven until done. The finished cake springs back, pulls away from the edges, and a toothpick comes out dry.

Let the cake stand in the pan for about 10 minutes, then remove it. Cool the cake on a rack and serve with tea.
