Description

To ensure the sherbet turns out flavorful, use a saucepan or sauté pan with a thick bottom. It is very important that the sugar doesn't burn, but melts evenly. Keep the heat at the lowest possible level. Only with such gentle heating will the ingredients melt and combine properly. Also note that it's not recommended to remove the pan from the heat while cooking. The caramel will thicken immediately, which could negatively affect the quality of the sherbet. For the filling, you can use any nuts you like.

    Prepare the necessary ingredients.

    Place 2 tablespoons of sugar from the total amount into a heavy-bottomed pot. Put it on low heat and melt the sugar.

    Add the butter and melt completely. Keep the heat low.

    Without removing from the heat, add condensed milk to the melted butter. Mix until smooth.

    Add the sugar. Stir constantly. As soon as the mixture becomes liquid, cook for 30 minutes.

    While the mixture is cooking, prepare the mold for sherbet. You can use a glass mold, previously greased with vegetable oil, or a silicone one. Place 1/3 of the dried nuts on the bottom of the mold.

    When the mixture begins to darken, check it for readiness. Drop a small amount of caramel into a glass of cold water and roll it into a ball. It should be soft and not smudge in your hands. This indicates that the mixture is ready.

    Now you need to work very quickly, as the caramel mixture hardens rapidly without heat. Pour it into the mold, add the remaining nuts on top. Immediately mix and spread evenly in the mold.

    Wet your hands with water and smooth the top of the sherbet. Leave it in the mold for 5 hours. If you are making sherbet in a glass mold, after half an hour make incisions with a knife along which it will be easier to cut later. This is not necessary for a silicone mold.
