
Creamy onions with bacon

1. Prepare a bowl with ice water. Boil pearl onions for 3 minutes in a saucepan of salted boiling water. Drain the water and place the onions into the bowl with ice water. Drain again. Peel the onions. You can also use frozen, already peeled onions.

2. Cut the bacon into small cubes. In a medium pot, fry the bacon until crispy. Then remove with a slotted spoon and place the bacon on paper towels to drain the fat. Leave only 2 tablespoons of bacon fat in the pot, drain the rest.

3. Add pearl onions, heavy cream, and nutmeg to the pot. Season with salt to taste. Cover the pot with a lid, leaving it slightly ajar. Simmer the onions until they are nearly fully cooked, about 90% done. Then remove the lid and finish cooking the onions until completely tender. The cream should reduce by half. Stir in the sherry.

4. Remove the onions with a slotted spoon and place them onto a serving dish. Cook the remaining cream sauce until it reaches the desired consistency, season to taste, and pour the sauce over the onions. Serve with fried bacon and chopped green onions.
