
Cream filling for sponge cake
Description
The recipe won't take much time. The cream turns out quite sweet, so adjust the amount of sugar in the biscuit layers and their soaking syrup accordingly. If you're preparing a biscuit cake or pie for a special occasion, you can color the cream with food coloring to give the dessert a festive, unique look. Serve chilled.

Step 1

Mix milk with sugar and salt in a saucepan and place over heat. Gradually add flour and stir continuously with a whisk until a smooth mixture forms. Separately, lightly beat the egg yolks with a whisk and add them to the milk mixture. The milk mixture should not boil.

When the mixture thickens slightly, turn off the heat and add vanilla extract and butter, stirring thoroughly.

Whip the cream with a mixer until fluffy. When the cream has cooled slightly, add the whipped cream to it and mix well.

The sponge cake layers need to be soaked. For this, I used peach jam diluted with water and cognac. Only after that can the sponge layers be layered with our buttercream.
