It's best to use plain ice cream without any fruit or chocolate mix-ins.

1. Pour the cream into a saucepan, add caramels, cinnamon, and other spices to taste (I also added a bit of cardamom). Then, over low heat, melt the caramels and cook the mixture until thickened.

3. Fill about half of the glass with the resulting mixture, then add some chilled soda and stir. Top with whipped cream and drizzle syrup on top.
